Ingredients

  • 1 box Yellow cake mix
  • 11 ounces Mandarin oranges with juice
  • 4 large Eggs
  • 0.5 cups Vegetable oil
  • 8 ounces Cool Whip (thawed)
  • 20 ounces Crushed pineapple with juice
  • 3.4 ounces Vanilla pudding mix (instant)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.

Step 2

In a large mixing bowl, combine the yellow cake mix, mandarin oranges (with their juice), eggs, and vegetable oil. Beat on medium speed until the batter is smooth and well combined.

Step 3

Divide the batter evenly between the prepared cake pans. Use a spatula to smooth the tops.

Step 4

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove from the oven and let the cakes cool completely in the pans on a wire rack.

Step 5

While the cakes are cooling, prepare the frosting. In a medium mixing bowl, combine the Cool Whip, crushed pineapple (with juice), and vanilla pudding mix. Stir until well mixed and creamy. Refrigerate the frosting until ready to use.

Step 6

Once the cakes are completely cool, remove them from the pans. Place one cake layer on a serving plate and spread a generous layer of frosting on top.

Step 7

Repeat the process with the second and third cake layers, frosting the top and sides of the cake once it is fully assembled.

Step 8

Refrigerate the assembled cake for at least 1 hour before serving to allow the flavors to meld and the frosting to set.

Step 9

Serve chilled and enjoy this delightful Southern treat!
