  • 2 pieces pork tenderloin
  • 150 grams dried apricots
  • 75 grams fresh breadcrumbs
  • 2 tablespoons unsalted butter

  • 2 minced garlic cloves
  • 6 chopped fresh sage leaves
  • 60 milliliters chicken stock
  • 1 tablespoon plain flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 125 milliliters white wine
  • 125 milliliters heavy cream

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the dried apricots in a small saucepan, cover with water, and simmer for 5-7 minutes until softened. Drain and finely chop the apricots.

Step 3

In a skillet over medium heat, melt the butter. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.

Add the chopped apricots, fresh breadcrumbs, and sage to the skillet. Stir to combine and cook for 1-2 minutes. Add the chicken stock, stir, and remove from heat. Let the stuffing cool slightly.
