Ingredients

  • 3 lbs pork shoulder roast (bone-in or boneless)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 2 tbsp apple cider vinegar
  • 4 carrots, peeled and chopped
  • 1.5 lbs baby potatoes or chopped Yukon gold potatoes

Directions

Step 1

Pat the pork shoulder roast dry with paper towels and set aside.

Step 2

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.

Rub the spice mixture evenly all over the pork roast.
