Ingredients

  • 800 grams Beef (chuck roast, cubed)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 whole Onion (medium, diced)
  • 3 cloves Garlic cloves (minced)
  • 250 grams Mushrooms (sliced)
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 750 milliliters Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Fresh thyme
  • 120 grams Sour cream
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Season the beef cubes with salt and black pepper thoroughly. Let them sit while preparing other ingredients.

Step 2

Heat olive oil in a large, heavy-bottomed pot over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove and set aside.

Step 3

In the same pot, add diced onion and sauté until translucent, about 5 minutes. Stir occasionally to prevent burning.

Step 4

Add the minced garlic and sliced mushrooms to the pot. Cook for another 3 minutes, stirring often until mushrooms begin to soften.

Step 5

Add butter to the pot and let it melt. Sprinkle flour over the mixture, stirring continuously until the flour is well incorporated.

Step 6

Gradually pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer.

Step 7

Add the Worcestershire sauce and fresh thyme, then return the browned beef cubes to the pot.

Step 8

Reduce the heat to low, cover the pot, and let the mixture simmer for 1.5 to 2 hours until the beef is tender. Check occasionally and stir to prevent sticking.

Step 9

Once the beef is tender, stir in the sour cream until the sauce is creamy and uniform.

Step 10

Taste and adjust seasoning with more salt or pepper if necessary.

Step 11

Garnish with fresh parsley before serving.

Step 12

Serve hot with mashed potatoes, rice, or crusty bread to soak up that delicious sauce.
