  • 3 medium celery stalks
  • 1.5 pounds baby potatoes
  • 2 cups beef broth
  • 0.5 cups red wine (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 whole bay leaves

Directions

Step 1

Preheat your oven to 300°F (150°C).

Generously season the chuck roast with salt and black pepper on all sides.

In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
