Ingredients

  • 8 oz tempeh
  • 1 cup canned white beans (e.g., cannellini or navy beans), drained and rinsed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground fennel seeds
  • 0.5 tsp dried sage
  • 0.25 tsp dried thyme
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • 2 tbsp olive oil (for cooking)
  • 0.25 tsp black pepper
  • 0.25 tsp salt (optional)

Directions

Step 1

In a small bowl, mix the ground flaxseed and water to create a flax egg. Let it sit for 5 minutes to thicken.

Step 2

Crumble the tempeh into small pieces and add it to a food processor along with the drained and rinsed white beans.

Step 3

Add the onion powder, garlic powder, smoked paprika, ground fennel seeds, dried sage, dried thyme, soy sauce, maple syrup, black pepper, and optional salt to the food processor.

Step 4

Process the mixture until it is well-combined but not completely smooth. It should still have some texture.

Step 5

Add the flax egg to the mixture and pulse a few times to incorporate it evenly.

Step 6

Scoop out about 2 tablespoons of the mixture at a time and form it into a small patty with your hands. Repeat until all of the mixture has been used (you should get about 8 patties).

Step 7

Heat the olive oil in a large skillet over medium heat.

Add the patties to the skillet, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.

Step 9

Serve warm as part of a breakfast plate, in a sandwich, or on their own with your favorite dipping sauce!
