Ingredients

  • 400 grams tempeh
  • 5 pieces shallots
  • 4 pieces garlic cloves
  • 1 teaspoon coriander seeds
  • 50 grams coconut sugar
  • 2 pieces bay leaves
  • 2 cm piece galangal
  • 1 tablespoon tamarind paste
  • 1 teaspoon salt
  • 500 ml water
  • 100 ml cooking oil

Directions

Step 1

Cut the tempeh into medium-sized rectangular pieces.

Step 2

Using a mortar and pestle or a food processor, grind the shallots, garlic, and coriander seeds into a smooth paste.

Step 3

In a medium saucepan, combine the ground paste, coconut sugar, bay leaves, galangal, tamarind paste, and salt. Add the water and stir well.

Step 4

Add the tempeh pieces to the saucepan and ensure they are fully submerged in the mixture.

Step 5

Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 30 minutes, until the liquid is reduced and infused into the tempeh.

Step 6

Remove the tempeh from the saucepan and set it aside to cool slightly.

Step 7

In a frying pan, heat the cooking oil over medium-high heat.

Step 8

Fry the tempeh pieces until they are golden brown and crispy on both sides, about 2-3 minutes per side.

Step 9

Remove the tempeh from the oil and drain them on paper towels to absorb any excess oil.

Step 10

Serve the Tempe Bacem warm as a delicious, protein-rich accompaniment to rice or as a snack.
