Ingredients

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 0.25 cups Rice vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 10 sheets Nori sheets (dried seaweed)
  • 200 grams Sashimi-grade salmon or tuna
  • 1 large Cucumber
  • 1 Avocado
  • 0 for serving Soy sauce
  • 0 for serving Wasabi
  • 0 for serving Pickled ginger

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and results in better-textured rice.

Step 2

In a pot, combine the rinsed rice and water. Cover and bring to a boil over medium-high heat. Once boiling, reduce the heat to low and simmer for 15 minutes.

Remove the pot from the heat and let the rice sit, covered, for an additional 10 minutes to finish steaming.

In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently and stir until the sugar and salt dissolve. Let this mixture cool to room temperature.

Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the rice, gently folding with a spatula to coat the rice evenly. Allow the rice to cool to room temperature.

While the rice cools, prepare the fillings. Slice the sashimi-grade fish into thin strips. Peel and thinly slice the cucumber and avocado.

To assemble a hand roll, place a half-sheet of nori in your palm, shiny side down. Add about 2 tablespoons of prepared sushi rice in the center and gently press it down.

Fold one corner of the nori over the fillings, and then roll into a cone shape, using a small grain of rice as glue, if necessary, to keep the nori sealed.
