Ingredients

  • 2 pieces (5-6 oz each) filet mignon steaks
  • 2 slices thick-cut bacon
  • 1 teaspoon salt
  • 1 teaspoon (freshly ground) black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves (smashed) garlic
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the filet mignon steaks dry with paper towels to remove excess moisture.

Step 3

Season each steak generously with salt and black pepper on all sides.

Step 4

Wrap each filet mignon with a slice of thick-cut bacon, securing it in place with kitchen twine or a toothpick.

Step 5

Heat a cast-iron skillet over medium-high heat and add olive oil.

Step 6

Once the skillet is hot and the oil is shimmering, place the bacon-wrapped steaks in the pan, seam-side down, to sear the bacon first. Cook for about 1-2 minutes per side to render the bacon and achieve a golden-brown crust.

Step 7

Add unsalted butter, garlic cloves, rosemary, and thyme to the skillet.

Step 8

Tilt the skillet slightly to pool the melted butter, and use a spoon to continuously baste the steaks with the herb-infused butter for 1-2 minutes.

Step 9

Transfer the skillet to the preheated oven and roast the steaks for 5-7 minutes for medium-rare or longer, depending on your desired level of doneness (use a meat thermometer: 130°F for medium-rare, 140°F for medium).

Step 10

Carefully remove the skillet from the oven and transfer the steaks to a cutting board. Let them rest for 5 minutes to allow the juices to redistribute.

Step 11

Remove the kitchen twine or toothpick from the bacon before serving.

Step 12

Plate the bacon-wrapped filet mignon and spoon some of the herb-infused butter from the skillet over the top for extra flavor. Serve immediately with your favorite sides.
