Place the unsalted butter in a medium-sized, heavy-bottomed saucepan and melt it over low heat.
Once the butter has melted completely, allow it to simmer gently. You will notice the milk solids beginning to separate and settle at the bottom, while the clarified butter turns golden.
Add the minced garlic, grated ginger, and diced onion to the melted butter, stirring to combine. Continue to simmer on low heat. The aromatics should infuse the butter without browning.
Add the crushed cardamom pods, coriander seeds, fenugreek seeds, dried basil, dried oregano, turmeric powder, ground cinnamon, rosemary sprig, and thyme sprigs to the butter mixture.
Stir the mixture well and let it simmer for 30–35 minutes on low heat. During this time, the butter will become richly infused with the flavors and aromas of the herbs and spices.
