Ingredients

  • 1 pound ground beef
  • 1 medium onion
  • 3 pieces garlic cloves
  • 2 cups uncooked elbow macaroni
  • 14.5 ounces (1 can) diced tomatoes
  • 15 ounces (1 can) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cheddar cheese

Directions

Step 1

In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break it apart with a wooden spoon as it cooks, about 5-7 minutes. Drain any excess grease if needed.

Step 2

Dice the onion and mince the garlic. Add both to the pot with the ground beef, cooking for an additional 3-4 minutes until the onion is softened and translucent.

Step 3

Stir in the uncooked elbow macaroni, diced tomatoes (including the juice from the can), tomato sauce, and beef broth.

Step 4

Add the soy sauce, Italian seasoning, paprika, salt, and black pepper. Stir everything together well.

Step 5

Increase the heat to bring the mixture to a boil, then reduce it to a simmer. Cover the pot with a lid and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.

Step 6

Remove the pot from heat and sprinkle the grated cheddar cheese over the top. Gently fold the cheese into the goulash until melted and fully incorporated.

Step 7

Serve the goulash warm in bowls, garnished with additional cheese or fresh herbs if desired. Enjoy!
