Ingredients

  • 1 3-4 lbs Whole chicken
  • 3 tablespoons Olive oil
  • 1 Lemon
  • 4 large Garlic cloves
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 2 teaspoons Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 medium, chopped Carrots
  • 4 medium, quartered Red potatoes
  • 1 large, chopped Yellow onion
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the chicken inside and out under cold water and pat it dry with paper towels.

Step 3

Rub the chicken with olive oil, making sure it is evenly coated.

Step 4

Cut the lemon in half and place it inside the chicken cavity along with 2 garlic cloves, 1 sprig of rosemary, and 2 sprigs of thyme.

Step 5

Mince the remaining garlic cloves and mix them in a small bowl with the paprika, salt, pepper, and 1 tablespoon of olive oil to make a seasoning paste.

Step 6

Rub the seasoning paste all over the chicken, making sure to get under the skin where possible for extra flavor.

Step 7

In a large roasting pan, spread the chopped carrots, potatoes, and onion evenly across the bottom.

Step 8

Place the chicken on top of the vegetables, breast side up.

Pour the chicken broth into the roasting pan around the vegetables to help keep everything moist during cooking.

Scatter the remaining rosemary and thyme sprigs over the vegetables.

Place the roasting pan in the oven and roast for 1 hour and 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when checked at the thickest part of the thigh.

Every 30 minutes, baste the chicken with the juices from the bottom of the pan to keep it moist and flavorful.

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
