Preheat your oven to 375°F (190°C).
Rinse the chicken inside and out under cold water and pat it dry with paper towels.
Rub the chicken with olive oil, making sure it is evenly coated.
Cut the lemon in half and place it inside the chicken cavity along with 2 garlic cloves, 1 sprig of rosemary, and 2 sprigs of thyme.
Mince the remaining garlic cloves and mix them in a small bowl with the paprika, salt, pepper, and 1 tablespoon of olive oil to make a seasoning paste.
Rub the seasoning paste all over the chicken, making sure to get under the skin where possible for extra flavor.
In a large roasting pan, spread the chopped carrots, potatoes, and onion evenly across the bottom.
