Thinly slice the beef sirloin against the grain into bite-sized strips and place in a mixing bowl.
Add 2 tablespoons of cornstarch, 1 tablespoon soy sauce, 1 teaspoon grated ginger, and a pinch of salt to the beef. Mix well to coat, then set aside to marinate for 10 minutes.
While the beef marinates, core and thinly slice the apples (leave the skin on for extra crunch and texture). Slice the red bell pepper and onion into thin strips.
In a small bowl, whisk together the remaining 2 tablespoons soy sauce, 2 tablespoons honey, and 2 tablespoons water. Set this sauce aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the beef in a single layer and sear for 2 minutes on each side until browned. Remove the beef from the skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in the minced garlic, sautéing for about 30 seconds until fragrant.
Add the sliced onions and red bell pepper. Stir-fry for 3-4 minutes until they begin to soften but still retain some crunch.
Add the sliced apples to the skillet and stir-fry for another 2 minutes. The apples should warm up but remain crisp.
Return the beef to the skillet along with the prepared sauce. Toss everything together and cook for another 2-3 minutes until the beef is cooked through and the sauce coats all the ingredients.
Season with salt and black pepper to taste. Remove from heat and sprinkle sesame seeds and optional nuts (cashews or almonds) on top for an extra crunch.
Garnish with sliced green onions and serve hot over steamed rice or noodles.
