Ingredients

  • 1.5 pounds ground beef
  • 0.5 pounds ground pork
  • 1 cup breadcrumbs
  • 0.5 cups whole milk
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 0.25 cups ketchup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoons black pepper, freshly ground
  • 0.5 cups ketchup (for glazing)
  • 1 tablespoon light brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a small skillet, melt the butter over medium heat. Add the finely chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the breadcrumbs and milk. Stir to soak the breadcrumbs evenly, then let sit for 2-3 minutes.

Step 4

Add the ground beef, ground pork, sautéed onion and garlic mixture, eggs, Worcestershire sauce, ketchup, Dijon mustard, chopped parsley, kosher salt, and black pepper to the breadcrumb mixture.

Step 5

Using clean hands, gently mix the ingredients until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 6

Shape the meat mixture into a loaf and place it on the prepared baking sheet, or press it into the greased loaf pan.

Step 7

In a small bowl, whisk together the 1/2 cup ketchup, light brown sugar, and apple cider vinegar to make the glaze.

Step 8

Spread half of the glaze evenly over the top of the meatloaf.

Step 9

Bake the meatloaf in the preheated oven for 40 minutes. Remove from the oven, spread the remaining glaze over the top, and return to the oven.

Step 10

Continue baking for an additional 20 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) on an instant-read thermometer.

Step 11

Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
