Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 large Eggs
  • 2 tablespoons Milk
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 0.5 cup Dry white wine
  • 0.5 cup Chicken broth
  • 0.25 cup Lemon juice
  • 2 tablespoons (chopped) Fresh parsley
  • 4 pieces Lemon slices

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap or parchment paper. Pound the chicken to an even thickness (about 1/4 inch) using a meat mallet or rolling pin.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

Set up a breading station with two shallow bowls: one containing the flour, and the other containing the eggs whisked with milk.

Step 4

Dredge each chicken breast in the flour, shaking off the excess. Then dip it into the egg mixture, ensuring it is fully coated.

Step 5

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.

Step 6

Add the coated chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 7

In the same skillet, add the white wine, chicken broth, and lemon juice. Scrape up any browned bits from the bottom of the pan.

Step 8

Bring the mixture to a simmer and let it reduce by half (about 5 minutes).

Step 9

Stir in the remaining 2 tablespoons of butter until the sauce becomes silky and smooth.

Step 10

Return the cooked chicken to the skillet, spooning the sauce over it. Allow the chicken to warm in the sauce for 2-3 minutes.

Step 11

Garnish the dish with chopped parsley and lemon slices before serving.

Step 12

Serve hot with your choice of side dishes, such as pasta, rice, or steamed vegetables.
