Ingredients

  • 500 g Potatoes
  • 50 g Salted butter
  • 125 g All-purpose flour
  • 1 tsp Salt
  • 1 tbsp Vegetable oil or butter (for cooking)

Directions

Step 1

Peel the potatoes and cut them into small chunks to help them cook evenly.

Step 2

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to a simmer and cook for around 10-12 minutes, or until the potatoes are fork-tender.

Step 4

Drain the potatoes and return them to the pot. Allow them to sit for a couple of minutes to evaporate any excess moisture.

Step 5

Mash the potatoes thoroughly using a potato masher until smooth, ensuring there are no lumps.

Step 6

While the mashed potatoes are still warm, add the butter and salt, and mix well until the butter is fully melted and incorporated.

Step 7

Gradually add the flour to the potato mixture, mixing until a soft dough forms. Be careful not to overwork the dough to maintain its light texture.

Step 8

Turn the dough out onto a lightly floured surface and gently knead it just to bring it together.

Step 9

Roll the dough out to about 1 cm thickness. Use a round cutter or a knife to cut the dough into circles or wedges.

Step 10

Heat a large, non-stick griddle or frying pan over medium heat. Grease it lightly with vegetable oil or butter.

Step 11

Cook the tattie scones in batches for 3-4 minutes on each side, or until golden brown and slightly crisp on the surface.

Step 12

Remove the cooked scones from the pan and keep warm while you cook the remaining batches.

Step 13

Serve the tattie scones warm with butter, jam, or as part of a traditional Scottish breakfast. Enjoy!
