Ingredients

  • 500 grams Boneless chicken thighs
  • 3 tablespoons Soy sauce
  • 2 tablespoons Sake
  • 1 teaspoon Grated ginger
  • 1 teaspoon Sugar
  • 1 cup Potato starch (or cornstarch)
  • 500 ml Vegetable oil (for frying)
  • 1 whole Lemon wedges (optional, for serving)

Directions

Step 1

Cut the boneless chicken thighs into bite-sized pieces, roughly 4-5 cm in size.

Step 2

In a bowl, combine the soy sauce, sake, grated ginger, and sugar. Mix well to create the marinade.

Step 3

Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl and let the chicken marinate in the refrigerator for 15-30 minutes.

Step 4

Heat the vegetable oil in a deep pot or fryer to 170°C (340°F). While the oil is heating, prepare the coating.

Step 5

Place the potato starch in a shallow dish. Remove the chicken from the marinade and shake off any excess liquid before dredging each piece in the potato starch. Ensure the chicken is well coated.

Step 6

Carefully lower a few pieces of chicken into the hot oil, being careful not to overcrowd the pot. Fry in batches for 3-4 minutes, or until the chicken is golden brown and cooked through.

Step 7

Remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Repeat with the remaining chicken pieces.

Step 8

Serve the Tatsuta Age fried chicken hot with lemon wedges on the side, if desired.
