Ingredients

  • 24 pieces Frozen tater tots
  • 6 pieces Large eggs
  • 1 cup Shredded cheddar cheese
  • 0.25 cup Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cup Diced cooked bacon or ham (optional)
  • 2 tablespoons Chopped green onions (optional)
  • 1 bottle Nonstick cooking spray

Directions

Step 1

Preheat the oven to 400°F (200°C). Spray a 12-cup muffin tin generously with nonstick cooking spray.

Step 2

Place 2 frozen tater tots into each muffin cup. Bake in the preheated oven for 10 minutes to soften the tater tots.

Step 3

Use a small spoon or the back of a measuring cup to gently press the softened tater tots into the bottom and up the sides of each muffin cup to form a 'cup' shape. Return them to the oven and bake for another 5 minutes until slightly crispy.

In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

If using, stir in the diced bacon or ham. Add half of the shredded cheddar cheese and mix to evenly combine.
