Ingredients

  • 4 large Eggs
  • 3 medium Tomatoes
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Sugar
  • 2 tablespoons Fresh parsley
  • 0.25 teaspoons Red chili flakes (optional)

Directions

Step 1

Wash the tomatoes and dice them into small cubes. Set aside.

Step 2

Finely chop the garlic cloves and parsley. Keep them separate.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

When the oil is hot, add the chopped garlic and sauté for about 30 seconds until fragrant.

Add the diced tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices, creating a thick sauce.

Season the tomato mixture with salt, black pepper, and sugar. If using chili flakes, add them at this stage for heat.
