Ingredients

  • 1 cup Bulgar wheat
  • 1.5 cups Boiling water
  • 2 tablespoons Olive oil
  • 1 Small onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 medium Carrot (grated)
  • 1 teaspoon Cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Chili powder
  • 1 Egg
  • 0.75 cup Breadcrumbs
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Mayonnaise
  • 1 Lime (zested and juiced)
  • 4 Buns
  • 4 Lettuce leaves
  • 4 Tomato slices

Directions

Step 1

Place the bulgar wheat in a heatproof bowl and pour the boiling water over it. Cover and let sit for 15 minutes until softened. Drain any excess water and set aside.

Step 2

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.

Step 3

Stir in the grated carrot, cumin, ground coriander, and chili powder. Cook for 2-3 minutes, then remove from heat.

Step 4

In a large mixing bowl, combine the cooked bulgar wheat, the onion and carrot mixture, the egg, breadcrumbs, chopped cilantro, salt, and black pepper. Mix until thoroughly combined.

Form the mixture into 4 patties of equal size. Place them on a plate and refrigerate for 10 minutes to firm up.

Step 6

While the patties are chilling, prepare the lime mayo by mixing the mayonnaise with the lime zest and lime juice in a small bowl. Set aside.

Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for 3-4 minutes per side, or until golden brown and heated through.

Toast the buns lightly, if desired. Spread a generous amount of lime mayo on the bottom half of each bun.

Step 9

Place a lettuce leaf on top of the mayo, followed by a cooked bulgar burger patty, a slice of tomato, and the top half of the bun.
