  • 2 cups Shredded cheddar cheese

  • 1 cup Cooked chicken breast, shredded
  • 1 piece Red bell pepper, diced
  • 3 stalks Green onion, sliced
  • 2 tablespoons Cilantro, chopped (optional)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Butter or oil
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)
  • 0.5 cup Guacamole (for serving)

Directions

Step 1

In a medium mixing bowl, combine the shredded chicken, red bell pepper, green onion, cilantro (optional), ground cumin, chili powder, salt, and black pepper. Mix well to combine the flavors.

Step 2

Heat a large non-stick skillet over medium heat. Add a small amount of butter or oil and let it melt and coat the pan.

Step 3

Place one tortilla in the skillet. Sprinkle 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded Monterey Jack cheese on one half of the tortilla.
