Ingredients

  • 4 bone-in pork chops
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1.5 pounds baby potatoes (halved)
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 apples (peeled and sliced)
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 0.5 teaspoons cinnamon
  • 3 sprigs fresh thyme (optional, for garnish)

Directions

Step 1

Pat the pork chops dry with a paper towel. Season both sides with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of paprika. Set aside.

Step 2

In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until browned. Remove them from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the halved baby potatoes, season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper, and cook for 10-12 minutes, stirring occasionally, until golden and fork-tender. Remove the potatoes and set them aside.

Step 4

In the same skillet, melt 2 tablespoons of butter over medium heat. Add the sliced apples, 2 tablespoons of brown sugar, 2 tablespoons of apple cider vinegar, and 0.5 teaspoon of cinnamon. Stir to combine and cook for 5-7 minutes until the apples are softened and caramelized.

Step 5

Return the seared pork chops and cooked potatoes to the skillet, nestling them around the apples. Add 1 tablespoon of butter on top and cover with a lid. Reduce the heat to low and cook for an additional 5-7 minutes, or until the pork chops are cooked through to an internal temperature of 145°F.

Step 6

Remove the skillet from the heat and garnish with fresh thyme sprigs, if desired. Allow the dish to rest for 3-5 minutes before serving.

Step 7

Serve the pork chops hot with the potatoes and apples on the side, spooning some of the pan sauce over the top for extra flavor.
