Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegetable oil
  • 0.5 cup Sour cream
  • 0.5 cup Applesauce

Directions

Step 1

Peel the potatoes and grate them using the large holes of a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much water as possible.

Step 2

Grate the onion using the same grater, and add it to the grated potatoes.

Step 3

In a large mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and black pepper. Mix thoroughly to form a cohesive mixture.

Step 4

In a large skillet, heat the vegetable oil over medium-high heat until shimmering but not smoking.

Step 5

Scoop about 2 tablespoons of the potato mixture and gently shape it into a flat patty. Place it in the hot oil. Continue shaping and frying, being careful not to overcrowd the pan.

Step 6

Cook each latke for 3-4 minutes on each side, or until golden brown and crispy. Remove the cooked latkes from the skillet and place them on a plate lined with paper towels to drain excess oil.

Step 7

Repeat the frying process with the remaining potato mixture, adding more oil to the skillet as needed.

Step 8

Serve the latkes hot with sour cream and applesauce on the side for dipping.
