Ingredients

  • 125 ml Water
  • 125 ml Whole milk
  • 115 grams Unsalted butter
  • 1 tsp Kosher salt
  • 140 grams All-purpose flour
  • 4 pieces Large eggs
  • 115 grams Gruyère cheese (shredded)
  • 0.5 tsp Freshly ground black pepper
  • 0.25 tsp Freshly grated nutmeg

Directions

Step 1

Preheat the oven to 200°C (400°F) and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine the water, milk, butter, and salt. Heat over medium heat until the butter melts and the mixture begins to boil.

Step 3

Immediately remove the saucepan from heat and add the flour all at once. Stir vigorously with a wooden spoon until the dough comes together and pulls away from the sides of the pan.

Step 4

Return the pan to low heat and cook, stirring constantly, for 1-2 minutes to dry out the dough slightly.

Step 5

Transfer the dough to a mixing bowl and let it cool for 2-3 minutes. Begin beating in the eggs one at a time, ensuring each is fully incorporated before adding the next. The mixture should become smooth and shiny.

Step 6

Stir in the Gruyère cheese, black pepper, and nutmeg.

Step 7

Transfer the dough into a piping bag fitted with a round tip or use a tablespoon to form small mounds (about 1-inch each) on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed and golden brown. Avoid opening the oven door during the first 15 minutes of baking.

Step 9

Serve warm or at room temperature. Enjoy immediately or reheat in a warm oven before serving if made in advance.
