Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Shallots (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 pieces Carrots (sliced into thin rounds)
  • 200 grams Green beans (trimmed)
  • 0.5 cups Dry white wine
  • 1 cup Low-sodium chicken broth
  • 0.5 cups Heavy cream
  • 2 tablespoons Fresh tarragon leaves (chopped)
  • 1 tablespoon Lemon juice

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining olive oil and butter. Add the chopped shallots and cook for 2-3 minutes until softened.
