  • 6 pieces Boneless, skinless chicken thighs
  • 1 cup Apricot preserves

  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh rosemary, chopped (optional)
  • 0.5 cup Chicken stock
  • 2 stalks Green onions, sliced (for garnish)
  • 4 servings Cooked rice or mashed potatoes (to serve)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them with salt and black pepper on both sides.

Heat the olive oil in a large skillet over medium heat. Add the chicken thighs and sear on each side for 3-4 minutes until golden brown. Remove the chicken from the skillet and set aside.
