Ingredients

  • 500 g pork tenderloin
  • 3 tbsp extra virgin olive oil
  • 3 pieces garlic cloves (minced)
  • 2 tsp paprika (sweet or smoked)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp ground cinnamon
  • 0.5 tsp cayenne pepper
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 piece lemon (juiced)
  • 2 tbsp fresh parsley (chopped, for garnish)
  • 8 pieces wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the pork tenderloin into bite-sized cubes, roughly 2-3 cm in size.

Step 2

In a large mixing bowl, whisk together olive oil, minced garlic, paprika, ground cumin, ground coriander, ground cinnamon, cayenne pepper, black pepper, salt, and lemon juice to create the marinade.

Step 3

Add the pork cubes to the bowl and toss them well to ensure they are evenly coated with the marinade. Cover and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Step 4

Preheat a grill or grill pan to medium-high heat.

Step 5

Thread the marinated pork cubes onto the soaked wooden skewers, making sure not to overcrowd the pieces on each skewer.

Step 6

Grill the skewers for 8-10 minutes, turning occasionally, until the pork is cooked through and has a nice char on the outside.

Step 7

Remove the skewers from the grill and let them rest for 2 minutes before serving.

Step 8

Garnish the skewers with chopped fresh parsley and serve hot with crusty bread or a side of your choice. Enjoy!
