Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons parsley, chopped (optional, for garnish)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 ounces fettuccine pasta
  • 4 cups water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package directions. Reserve 1/2 cup of the pasta cooking water before draining.

Step 2

While the pasta cooks, season the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

In the same skillet, add the butter and minced garlic. Sauté the garlic for 1-2 minutes until fragrant, being careful not to burn it.
