Ingredients

  • 225 grams All-purpose flour
  • 115 grams Unsalted butter (softened)
  • 50 grams Caster sugar
  • 1 large Egg yolk
  • 0.5 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking tray with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, cream together the softened butter and caster sugar using a wooden spoon or an electric hand mixer until light and fluffy.

Step 3

Add the egg yolk and vanilla extract to the creamed butter and sugar, and mix until fully incorporated.

Step 4

Sift the all-purpose flour into the bowl and mix gently until it forms a soft dough. Be careful not to overmix, as this can make the biscuits tough.

Step 5

Lightly flour a clean work surface and roll out the dough to a thickness of about 0.5 cm (1/4 inch).

Step 6

Using a round cookie cutter (around 6 cm or 2.5 inches in diameter), cut out circles of dough and place them onto the prepared baking tray, spacing them slightly apart.

Step 7

Use the tines of a fork to lightly decorate the edges or surface of each biscuit, if desired.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the cakes are just starting to turn a pale golden color around the edges. The biscuits should remain fairly pale overall.

Step 9

Remove the tray from the oven and allow the biscuits to cool for 5 minutes on the tray before transferring them to a wire rack to cool completely.

Step 10

Store in an airtight container for up to 5 days and enjoy with a warm cup of tea.
