Ingredients

  • 2 lbs Ground beef
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 0.5 cup Ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Brown sugar
  • 0.5 cup Ketchup (for glaze)
  • 1 tbsp Apple cider vinegar (for glaze)
  • 1 tbsp Brown sugar (for glaze)
  • 1 tsp Dijon mustard (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan.

Step 2

In a large bowl, combine the ground beef, finely diced onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, and paprika.

Step 3

Using clean hands or a large spoon, mix all the ingredients until just combined. Avoid overmixing as it can make the meatloaf too dense.

Step 4

Transfer the meat mixture to the prepared loaf pan and gently press it into an even layer.

Step 5

In a small bowl, prepare the glaze by mixing together the ketchup, apple cider vinegar, brown sugar, and Dijon mustard.

Step 6

Spread half of the glaze evenly over the top of the meatloaf.

Step 7

Place the loaf pan in the preheated oven and bake for 45 minutes.

Step 8

After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes.

Step 9

Check the internal temperature of the meatloaf with a meat thermometer. It should reach 160°F (71°C). If it's not there yet, bake for another 5-10 minutes as needed.

Step 10

Once cooked through, remove the meatloaf from the oven and let it rest in the pan for 10 minutes to allow the juices to redistribute.

Step 11

Carefully slice the meatloaf and serve warm with your favorite side dishes, such as mashed potatoes or roasted vegetables.
