Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup White rice
  • 2 cups Chicken broth
  • 1 can Cream of chicken soup
  • 1 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 1 sleeve Ritz crackers
  • 4 tablespoons Butter, melted
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Chopped parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the chicken breasts in a large pot and cover with water. Bring to a boil and cook until the chicken is fully cooked, about 15 minutes. Remove from water, let cool, then shred the chicken using two forks.

Step 3

In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.

Step 4

In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Step 5

Lightly grease a 9x13-inch casserole dish. Spread the chicken and rice mixture evenly into the dish.

Step 6

Crush the sleeve of Ritz crackers into small pieces and place in a mixing bowl. Pour the melted butter over the crackers and stir to coat evenly.

Step 7

Sprinkle the buttery cracker crumbs evenly over the casserole.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cracker topping is golden brown and crispy.

Step 9

Remove from the oven and let the casserole cool for 5 minutes before serving.

Step 10

Optional: Garnish with freshly chopped parsley before serving for added color and flavor.
