Ingredients

  • 500 grams boneless chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1.5 teaspoons curry powder
  • 2 medium granny smith apples, peeled, cored, and diced
  • 2 medium carrots, peeled and sliced
  • 1 medium red bell pepper, diced
  • 4 cups chicken stock
  • 1 cup coconut milk
  • 2 cups baby spinach
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh cilantro, chopped
  • 0 optional rice or naan, for serving

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Sear the chicken thighs for 3-4 minutes per side until golden brown. Remove from the pot and set aside.

Step 3

Reduce the heat to medium and add the remaining olive oil to the pot. Sauté the diced onions for 3-4 minutes until softened.

Add the minced garlic and grated ginger to the pot, cooking for 1 minute until fragrant.

After 25 minutes, stir in the coconut milk and baby spinach. Cook for another 5 minutes until the spinach is wilted.

Stir in the lemon juice and adjust seasoning with additional salt or pepper if needed.
