Ingredients

  • 1 pound beef sirloin
  • 3 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 2 teaspoons sesame oil
  • 2 tangerines (zested and juiced)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 1 large yellow onion (sliced)
  • 6 ounces snow peas (trimmed)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 0.5 teaspoons red pepper flakes
  • 3 green onions (sliced for garnish)
  • 1 teaspoon white sesame seeds (optional, for garnish)

Directions

Step 1

Slice the beef sirloin thinly across the grain into bite-sized strips. In a small bowl, combine the soy sauce and cornstarch, then toss the beef with this mixture to coat. Let it marinate for 10 minutes.

Step 2

In another bowl, whisk together the tangerine juice, tangerine zest, brown sugar, rice vinegar, and sesame oil to create the stir-fry sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Sear for 1-2 minutes per side until browned but not fully cooked. Remove the beef from the pan and set aside.

Step 4

Add the remaining tablespoon of vegetable oil to the skillet. Add the sliced onions and snow peas, and stir-fry for 2-3 minutes, until the vegetables are crisp-tender.

Step 5

Push the vegetables to the side, and add the garlic, ginger, and red pepper flakes to the center of the pan. Stir-fry for 30 seconds until fragrant.

Step 6

Return the beef to the skillet, then pour in the tangerine sauce. Toss everything together and cook for an additional 2-3 minutes, until the beef is cooked through and the sauce has slightly thickened.

Step 7

Remove from heat and garnish with sliced green onions and sesame seeds, if desired. Serve hot over steamed rice or noodles.
