Ingredients

  • 500 g pork spare ribs
  • 10 g ginger
  • 2 pieces scallions
  • 2 tbsp shaoxing wine
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 3 tbsp white vinegar
  • 4 tbsp granulated sugar
  • 500 ml water
  • 1 tbsp cornstarch
  • 2 tbsp water (for cornstarch slurry)
  • 2 tbsp vegetable oil
  • 1 tbsp toasted sesame seeds

Directions

Step 1

Cut the pork spare ribs into 4-5 cm pieces. Rinse the ribs under cold water and pat them dry with a paper towel.

Step 2

Peel and slice the ginger into thin slices. Cut the scallions into 4-5 cm segments.

Step 3

In a large pot, bring water to a boil. Blanch the ribs for 2-3 minutes to remove impurities. Drain and rinse the ribs under cold water.

Heat 2 tablespoons of vegetable oil in a heavy-bottomed skillet or wok over medium heat. Add the ginger and scallions and stir-fry until fragrant, about 1 minute.
