Ingredients

  • 1 cup Tamarind pulp
  • 1 cup Pitted dates
  • 1 cup Jaggery or brown sugar
  • 2 cups Water
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Black salt (kala namak)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ginger powder (optional)

Directions

Step 1

In a medium saucepan, combine the tamarind pulp, pitted dates, and water.

Step 2

Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.

Step 3

Reduce the heat and let it simmer for about 10 minutes, or until the dates soften and the mixture thickens slightly.

Step 4

Using an immersion blender or transferring the mixture to a regular blender, blend the mixture until it is smooth.

Step 5

Pour the blended mixture through a fine mesh sieve into a clean bowl or saucepan, pressing with a spoon to extract the liquid and discard any fibrous residue.

Step 6

Return the strained mixture to the saucepan. Add the jaggery or brown sugar, cumin powder, red chili powder, black salt, regular salt, and optional ginger powder.

Cook on low heat, stirring frequently, until the jaggery dissolves completely and the chutney thickens to your desired consistency (approximately 10 minutes).
