Ingredients

  • 1 cup Tamarind pulp
  • 2 cups Water
  • 1.5 cups Jaggery (or brown sugar)
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Dry ginger powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Black salt
  • 0.5 teaspoon Salt

Directions

Step 1

Place tamarind pulp in a medium saucepan and add 2 cups of water.

Step 2

Bring to a boil over medium-high heat, stirring occasionally.

Step 3

Reduce the heat to low and let it simmer for about 10 minutes until the tamarind is soft and the water is well-infused with its flavor.

Step 4

Let the tamarind mixture cool slightly, then strain it through a fine mesh sieve into a bowl to remove the fibers and seeds. Use a spoon to press as much pulp as possible through the sieve. Discard the solids.

Step 5

Return the tamarind water to the saucepan and add the jaggery or brown sugar.

Heat the mixture over medium heat, stirring until the jaggery dissolves completely.

Add cumin seeds, dry ginger powder, red chili powder, garam masala, black salt, and regular salt.
