Ingredients

  • 1 cup Yellow cornmeal
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cup Milk
  • 1 Large egg
  • 4 tablespoons Unsalted butter, melted
  • 15 ounces Canned pinto beans, drained and rinsed
  • 4 ounces Canned green chilies, diced
  • 1 cup Frozen corn kernels, thawed
  • 2 cups Cheddar cheese, shredded
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 2 Green onions, sliced
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, sugar, and salt.

Step 3

In a separate bowl, mix the milk, egg, and melted butter. Gradually stir the wet ingredients into the dry ingredients until just combined.

Step 4

Spread half of the cornbread batter evenly into the prepared baking dish.

Step 5

In another bowl, combine the pinto beans, green chilies, corn, 1 cup of shredded cheddar cheese, cumin, and chili powder. Mix well.

Step 6

Spread the bean and vegetable mixture evenly over the cornbread layer in the baking dish.

Step 7

Drop spoonfuls of the remaining cornbread batter over the top of the filling, spreading it as evenly as possible.

Step 8

Sprinkle the remaining 1 cup of shredded cheddar cheese over the top layer of cornbread batter.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the cornbread layer comes out clean.

Step 10

Remove the dish from the oven and let it cool for 5-10 minutes. Garnish with sliced green onions and chopped cilantro, if desired, before serving.
