Ingredients

  • 4 large eggs
  • 2 stalks green onions
  • 50 grams ham
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon mirin
  • 1 tablespoon neutral cooking oil

Directions

Step 1

In a mixing bowl, crack the eggs and whisk them thoroughly until their consistency is uniform.

Step 2

Finely chop the green onions and ham. Set aside.

Step 3

Add soy sauce, sugar, and mirin to the egg mixture. Whisk until fully combined.

Step 4

Gently stir the chopped green onions and ham into the egg mixture.

Step 5

Heat a tamagoyaki or non-stick rectangular pan over medium heat and lightly grease it with neutral cooking oil.

Step 6

Pour a thin layer of the egg mixture into the pan, just enough to cover the surface evenly. Tilt the pan to spread the mixture if needed.

Step 7

Allow the egg layer to cook until it is set but still slightly moist on top. Use chopsticks or a spatula to gently roll the layer to one side of the pan.

Step 8

Add a little more oil if necessary, then pour another thin layer of the egg mixture in the pan. Lift the rolled egg slightly to let the new mixture flow underneath it.

Step 9

Once the second layer is set, roll the cooked portion back toward the other side of the pan. Repeat this process, layering and rolling, until all the egg mixture is used.

Step 10

Transfer the rolled omelet onto a cutting board and let it cool slightly, then slice into evenly sized pieces.

Step 11

Serve warm or at room temperature as part of a meal, or pack it into a bento box for later.
