Rinse the sushi rice under cold water until the water runs clear.
In a pot, combine the rinsed rice and 1.25 cups of water. Bring to a boil, then lower the heat and simmer, covered, for 15 minutes.
Remove from heat and let it sit, covered, for another 10 minutes.
Mix the rice vinegar, sugar, and salt in a small bowl until dissolved.
Transfer the cooked rice to a large bowl. Gently fold in the vinegar mixture with a spatula and allow the rice to cool to room temperature.
Beat the eggs in a bowl and mix in soy sauce, mirin, and 1 teaspoon of sugar.
Heat a tamagoyaki pan or a small non-stick skillet over medium heat and add vegetable oil.
Pour a thin layer of the egg mixture into the pan, tilting to coat the bottom evenly.
As the egg mixture begins to set, roll it towards you with a spatula.
Repeat the process: oiling the pan, pouring and spreading the egg, and rolling until all mixture is used.
Let the tamagoyaki cool slightly, then cut it into long strips.
Place a sheet of nori, shiny side down, on a bamboo sushi mat.
Moisten your fingers to prevent sticking and spread half of the sushi rice evenly over the nori, leaving a 1-inch border at the top.
Place strips of tamagoyaki across the center of the rice.
Using the bamboo mat, roll the nori over the tamagoyaki, pressing firmly to shape the roll.
Seal the roll by moistening the nori edge.
Repeat the process with the remaining ingredients.
Using a sharp, wet knife, slice each roll into 6 pieces.
Serve immediately with soy sauce for dipping, if desired.
