Ingredients

  • 6 pieces Chicken thighs
  • 2 Preserved lemons
  • 1 cup Green or purple olives
  • 1 large Onion
  • 4 Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Sweet paprika
  • 0.5 teaspoon Ground cinnamon
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Fresh parsley
  • 2 cups Chicken stock or water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and finely chop the onion. Mince the garlic cloves.

Step 2

Heat olive oil in a large Dutch oven or tajine over medium heat. Add the chopped onion and garlic, and sauté until softened (about 5 minutes).

Add the chicken thighs to the pot. Sprinkle ground ginger, turmeric, paprika, cinnamon, salt, and black pepper over the chicken. Stir to evenly coat the chicken with the spices.
