Ingredients

  • 4 medium orange-fleshed sweet potatoes
  • 4 large fe'i bananas
  • 1 cup coconut milk
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons toasted coconut flakes (optional)

Directions

Step 1

Peel and cut the sweet potatoes into 1-inch cubes. Place them in a large pot and cover with water. Add a pinch of salt, bring to a boil, and cook for 12-15 minutes or until fork-tender. Drain and set aside.

Step 2

While the potatoes cook, peel the fe'i bananas and cut them into chunks or large slices.

Step 3

In a large skillet or sauté pan, melt 2 tablespoons of butter over medium heat. Add the fe'i bananas and sprinkle with brown sugar. Sauté for 5-7 minutes, turning occasionally, until they are golden and caramelized. Remove from heat and set aside.

Step 4

In a large mixing bowl, mash the cooked sweet potatoes until smooth. Stir in the coconut milk, vanilla extract, salt, and ground cinnamon until well combined.

Step 5

Transfer the mashed sweet potato mixture to a serving bowl or platter. Top with the caramelized fe'i bananas and drizzle any pan caramel over the top.

Step 6

If desired, sprinkle toasted coconut flakes on top for added texture and flavor.

Step 7

Serve warm as a side dish or a unique dessert option.
