Ingredients

  • 400 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cloves
  • 200 grams Sugar
  • 250 grams Tahini
  • 200 ml Orange juice
  • 1 whole Zest of orange
  • 50 ml Water
  • 1 teaspoon Vanilla extract
  • 80 grams Raisins (optional)
  • 80 grams Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch (23 cm) round baking pan or line it with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, baking powder, ground cinnamon, and ground cloves. Set aside.

Step 3

In another mixing bowl, whisk together the tahini and sugar until well combined and creamy.

Step 4

Add the orange juice, water, orange zest, and vanilla extract to the tahini mixture, and whisk until smooth.

Step 5

Gradually add the dry ingredients into the wet mixture, stirring with a wooden spoon or spatula until just combined. Avoid overmixing.

If using raisins and/or chopped walnuts, gently fold them into the batter.
