Ingredients

  • 400 grams Tagliatelle
  • 150 grams Smoked salmon
  • 250 ml Heavy cream
  • 50 grams Grated Parmesan cheese
  • 2 tablespoons Unsalted butter
  • 2 Garlic cloves, minced
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh dill, chopped
  • 0 to taste Salt
  • 0 to taste Ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the tagliatelle according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the unsalted butter in a large skillet over medium heat until melted.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant but not browned.

Step 4

Reduce the heat to medium-low. Pour the heavy cream into the skillet and stir gently to combine with the garlic. Simmer for 2-3 minutes until the cream begins to thicken slightly.

Step 5

Cut the smoked salmon into bite-sized strips and add them to the skillet. Stir to incorporate, letting the salmon warm through for 1-2 minutes.

Step 6

Add the grated Parmesan cheese, lemon zest, and lemon juice to the sauce. Stir until the cheese melts completely and the sauce becomes creamy.

Step 7

Season the sauce with salt and ground black pepper to taste, keeping in mind that smoked salmon can be salty.

Step 8

Toss the cooked tagliatelle into the skillet with the sauce. Use tongs to gently coat the pasta in the creamy smoked salmon mixture. Add a splash of the reserved pasta water if needed to loosen the sauce and ensure it coats the noodles evenly.

Step 9

Sprinkle the fresh chopped dill over the pasta and give it one final stir.

Step 10

Serve immediately, garnished with additional Parmesan cheese or dill if desired.
