Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 10 ounce (can) diced tomatoes with green chilies (Rotel)
  • 15 ounce (can) black beans, rinsed and drained
  • 15 ounce (can) pinto beans, rinsed and drained
  • 15 ounce (can) corn kernels, drained (or frozen, thawed)
  • 4 cups beef broth
  • 8 ounce (can) tomato sauce
  • 1 packet taco seasoning mix
  • 1 tablespoon ranch dressing mix
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat if necessary.

Add the diced onion and cook for 3-4 minutes until softened, stirring occasionally.

Stir in the minced garlic and cook for an additional minute until fragrant.
