Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1 cup black beans, rinsed and drained
  • 1 cup frozen corn
  • 3 large Russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • 1.5 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil, reduce the heat, and simmer until the potatoes are fork-tender, about 15 minutes.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Step 4

Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned and no longer pink, about 6-8 minutes. Drain any excess fat.

Step 5

Stir in taco seasoning and tomato paste, mixing thoroughly. Add the black beans and frozen corn, stirring to combine. Cook for another 2-3 minutes to heat through. Remove from heat and set aside.

Step 6

Once the potatoes are cooked, drain them and return them to the pot. Add butter, milk, shredded cheddar cheese (reserve 1/2 cup for topping), salt, and pepper. Mash until smooth and creamy. Adjust seasoning as needed.

Step 7

In a 9x9-inch or similar-sized baking dish, spread the beef mixture evenly across the bottom.

Step 8

Top the beef mixture with the mashed potatoes, spreading it out evenly with a spatula. Sprinkle the remaining shredded cheddar cheese over the potatoes.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the top is golden.

Step 10

Let the Taco Shepherd’s Pie cool for 5 minutes before serving. Garnish with chopped cilantro if desired. Enjoy!
