Ingredients

  • 1 pound Ground beef (or ground turkey for a lighter option)
  • 1 packet Taco seasoning
  • 6 cups Lettuce (romaine or mixed greens), chopped
  • 1 cup Cherry tomatoes, halved
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup Shredded cheddar cheese
  • 1 large Avocado, diced
  • 2 cups Crispy tortilla chips, crushed
  • 0.25 cup Fresh cilantro, chopped (optional)
  • 1 Lime, juiced
  • 0.5 cup Sour cream (or Greek yogurt)
  • 0.25 cup Ranch dressing
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the ground beef (or turkey) and cook for 5-7 minutes, breaking it apart as it browns. Drain excess fat if necessary.

Step 2

Add the taco seasoning to the cooked meat along with 1/4 cup of water. Stir well to combine, then simmer on low heat for 2-3 minutes. Set aside to cool slightly.

Step 3

While the meat cools, prepare the creamy lime dressing by whisking together the sour cream (or Greek yogurt), ranch dressing, lime juice, salt, and pepper in a small bowl. Adjust seasoning to taste.

Step 4

In a large salad bowl, combine the chopped lettuce, cherry tomatoes, black beans, corn, cheddar cheese, and diced avocado.

Step 5

Add the slightly cooled taco meat to the salad mixture and gently toss everything to combine.

Step 6

Right before serving, sprinkle the crushed tortilla chips on top for added crunch and garnish with chopped cilantro if desired.

Step 7

Drizzle the creamy lime dressing over the salad or serve it on the side for people to add as they like.

Step 8

Serve immediately and enjoy the 'Taco Salad a Little Switched Up Super Yummy!'
