  • 0.5 cup diced tomato
  • 0.5 cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup salsa

Directions

Step 1

In a medium-sized bowl, whisk together the eggs, milk, salt, and pepper until well blended, and set aside.

Step 2

Heat the olive oil in a non-stick skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until it softens.

Step 3

Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned, about 5-6 minutes.
