Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion
  • 2 large garlic cloves
  • 1 packet taco seasoning
  • 3 tablespoons tomato paste
  • 0.5 cup water
  • 4 hamburger buns
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 0.5 cup diced tomatoes
  • 0.5 cup sour cream
  • 2 tablespoons cilantro
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Finely chop the yellow onion and mince the garlic.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

Step 3

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned, about 5 minutes. Drain any excess grease if necessary.

Step 5

Stir in the taco seasoning, tomato paste, water, salt, and black pepper. Mix well and let it simmer for 3-4 minutes until the mixture thickens.

Step 6

Toast the hamburger buns lightly if desired. Place a generous scoop of the taco beef mixture onto the bottom half of each bun.

Step 7

Top each Taco Joe with shredded lettuce, shredded cheddar cheese, diced tomatoes, a dollop of sour cream, and a sprinkle of cilantro.

Step 8

Place the top half of the bun on top, and serve immediately while warm.
