In a large mixing bowl, combine the ground beef, taco seasoning, breadcrumbs, egg, salt, and black pepper. Mix gently with your hands until everything is well incorporated. Be careful not to overmix, as this can make the patties tough.
Divide the mixture into 4 equal portions and shape each portion into a burger patty about 3/4 inch thick. Make a small indentation in the center of each patty with your thumb to prevent it from puffing up while cooking.
In a small bowl, whisk together the mayonnaise and chipotle peppers in adobo sauce until smooth. Set the chipotle mayonnaise aside in the refrigerator.
Slice the tomato into thick slices and the red onion into thin rings. Wash and pat dry the lettuce leaves.
Heat a large skillet or grill pan over medium-high heat and add the vegetable oil. When the oil is shimmering, carefully place the burger patties in the pan. Cook for 4-5 minutes per side, or until the internal temperature reaches 160°F (70°C) for medium-well.
