Ingredients

  • 3 medium Granny Smith apples
  • 0.25 cups Granulated sugar
  • 0.25 cups Brown sugar
  • 1 teaspoons Ground cinnamon
  • 1 tablespoons Cornstarch
  • 3 tablespoons Water
  • 0.25 cups Caramel sauce
  • 8 pieces Premade empanada dough discs
  • 3 cups Vegetable oil

Directions

Step 1

Peel, core, and dice the Granny Smith apples into small cubes.

Step 2

In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, and ground cinnamon.

Step 3

Cook the apple mixture for 5–7 minutes, stirring occasionally, until the apples soften.

Step 4

In a small bowl, mix the cornstarch with water to create a slurry, then stir it into the apple mixture.

Step 5

Continue cooking for 2–3 minutes until the mixture thickens. Remove from heat and let it cool for 10 minutes.

Step 6

Once the filling has cooled, stir in the caramel sauce.

Step 7

Take one empanada dough disc and add about 2 tablespoons of the apple-caramel mixture to the center.

Step 8

Fold the dough over to create a half-moon shape and press the edges together firmly with a fork to seal.

Step 9

Repeat the process with the remaining dough discs and filling.

Step 10

In a deep saucepan, heat the vegetable oil to 350°F (175°C).

Step 11

Carefully fry 1–2 empanadas at a time, cooking for about 2–3 minutes on each side until golden brown.

Step 12

Remove the empanadas from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Step 13

Serve warm and enjoy your homemade Taco Bell Style Caramel Apple Empanadas!
